Food prices have sky-rocketed. Every South Africans budget could use a breather. Use our recipes to feed a family of 5 for under R100. Spaghetti Carbonara – Feeds up to 5 people for approximately R80

Spaghetti Carbonara Recipe

Ingredients:

4 rashers of bacon, diced

2 cloves of garlic, minced

3 eggs

1/2 cup grated parmesan cheese

Salt and pepper to taste.

Instructions:

  • Cook the spaghetti according to the package instructions.
  • In a pan, fry the bacon until crispy. Add the garlic and fry for another minute.
  • In a bowl, whisk together the eggs and parmesan cheese.
  • Drain the spaghetti and add it to the pan with the bacon and garlic. Turn off the heat.
  • Add the egg and cheese mixture to the pan and stir everything together until the spaghetti is coated in the sauce. Season with salt and pepper to taste.

One-Pot Chicken and Rice – Feeds up to 5 people for approximately R85

Hot Pot chicken & Rice recipe

Ingredients:

4 chicken thighs

1 onion, diced

2 cloves of garlic, minced

1 cup long-grain rice

2 cups chicken broth

1 tsp paprika

Salt and pepper to taste.

Instructions:

  • Season the chicken thighs with paprika, salt, and pepper.
  • In a large pot, heat some oil over medium-high heat and brown the chicken thighs on both sides.
  • Add the diced onion and minced garlic to the pot and fry until softened.
  • Add the rice and stir to coat it in the oil and chicken fat.
  • Pour in the chicken broth and bring everything to a boil. Reduce the heat to low and simmer for 20-25 minutes or until the rice is cooked and the chicken is tender.

Tuna and Sweetcorn Pasta Salad

Tuna & Sweetcorn Salad Recipe

Ingredients:

500g pasta

1 can of tuna

1 can of sweetcorn

1 red pepper, diced

2 tbsp of mayonnaise

1 tbsp mustard

Salt and pepper to taste

Instructions:

  • Cook the pasta according to package instructions. Drain and rinse with cold water.
  • In a large bowl, mix the tuna, sweetcorn, red pepper, mayonnaise and mustard.
  • Add the cooked pasta to the bowl and mix well.
  • Season with salt and pepper to taste.
  • Place in the refrigerator for at least 30 min before serving.
