January is always tough on the wallet. We aptly called Januworry after the many weeks we needed to make ends meet. This month’s recipes are cheap and easy to make. Poor Man’s Pie
Ingredients:
- 7 Large potatoes
- 1 Can sweetcorn
- 500g Boerewors/mince
- Salt & pepper to taste
- Optional: cheddar cheese
Method:
- Preheat the oven to 180°C.
- Cook your mince or boerewors until thoroughly cooked.
- Season with salt, and black pepper.
- Cut the boerewors into small chunks. Spread across a medium-sized oven dish, and add a tin of sweetcorn. Spread mashed potatoes evenly over the mixture. Sprinkle optional cheddar cheese over the top.
- Bake in the preheated oven until heated through, about 20 minutes.
Egg & Potato Casserole
Ingredients:
- 6 Large eggs
- 1 Onion, diced
- 3 Large potatoes, pre-boiled
- Salt & pepper to taste
- Optional: spring onions, bacon
Method:
- Preheat the oven to 180°C.
- In a pan, fry the onion and optional ingredients.
- Add the boiled potatoes, cut into smaller pieces along with the 6 large eggs and fried ingredients into an oven-proof bowl.
- Set to bake for 20min or until ready.
Spaghetti & Tomato Sauce
Ingredients:
- 1 Packet spaghetti
- 100ml Tomato sauce
- Salt & pepper to taste
- Optional: sprinkle cheese
Method:
- Boil spaghetti with salt and pepper.
- Strain and place back into the pot.
- Add tomato sauce, salt and black pepper to taste.
- Optional: sprinkle cheese over once served.
